COFFEE HACK: The Power of Instant Milk Powder

Calum here, Coffee Director here at Average Joes and I’ve recently discovered how to freeze distil milk without the need to freeze or distil the milk at all!!!
“Hey Cal, what the hell is freeze distilling milk? Isn’t this some whack job coffee snob shit!”That’s a fair point, let me explain why someone would do this before we go full cowboy on this experiment…
Freeze distilling milk for coffee is a method used to concentrate milk by removing water. This is done when we freeze the milk, and it separates from the water that is in the milk.
The process intensifies the milk's flavours and enhances its creamy texture. Is it worth doing at home? You be the judge.
1. FREEZE YOUR MALK: Pour your milk into a container and place it in the freezer until it is completely frozen.
2. THAW THAT THANG: Take the frozen milk out and let it thaw slowly at room temperature or in the refrigerator. As it thaws, the fat and sugars will melt faster than the water, which will remain as ice.
3. COLLECT YUMMY MALK CONCENTRATE: The liquid that melts first is mostly milk fats and sugars, which will make the milk concentrate sweeter and creamier. As it drains, it leaves behind the water content in the milk. Collect this concentrated milk, which will have a richer flavour and texture.
4. STEAM MILK GOODNESS: This concentrated milk can then be used in your coffee to provide a more intense, creamy taste compared to regular milk.
This method can be done at home with basic equipment, enhancing your coffee experience with richer, creamier milk… but it’s a bit of a mission. And most if the time, ain’t nobody got time for that!

Everyone loves a hack, and we’re no different.
There is a product that you can buy at your local supermarket called Instant Full Cream Milk Powder. First glance reaction would usually make the ‘brother ewwww’ meme pull from the depths of your subconscious, but don’t hate the player, hate the game. It’s actually pretty good.

In testing at home, I’ve found that using this powder dissolved straight into my milk of choice (full cream) at the right amount creates the exact same texture and enhanced sweetness that freeze distilling creates. But it’s INSTANT. No time spent freezing, thawing, or wasting a whole milk bottle on the experiment.

I found that a ratio of 60g (milk powder) : 1 litre (milk) was the perfect amount to recreate the same texture. To break this down to smaller amounts simply divide by how much you would like to make. Simple maths says divide this by 4 and you’ll get 15g milk powder / 250g milk, which is about enough for two small coffees.
HERE IS OUR STEP BY STEP TO SWEET CREAMY MILK HAPPINESS.
1. Weigh out your desired milk portion using coffee scales. Here we are making 1 coffee’s worth. (125g milk)
2. Scoop the desired portion of milk powder and add into milk using coffee scales. (7.5g powder)
3. Steam milk to silky heaven using steam wand of coffee machine and add to espresso.
